Dried mushrooms have the same qualities of fresh, but you can use them when you want them. Cover the mushrooms with water until soft – at least thirty minutes before using them – and don’t discard the liquid! You can use the mushroom soaking liquid in your dish.

A bag of dried mushrooms should plump up to about six ounces of rich and flavorful mushrooms - for use in dishes like cream soup, quiche, risotto, or savory crepe.
