Chicken of the Woods Recipe:
per 1 cup chicken of the woods 1 Tbsp unsalted butter or olive oil 1 clove garlic Salt to taste, perhaps 1/2 tsp. paprika and chopped herbs to taste
Keep it simple with chicken of the woods mushrooms. Saute mushrooms in butter (or olive oil if you prefer) and a little salt till tender, or about 5 minutes. Taste a piece to see if you like it before adding garlic and heavy cream. Add garlic and cream and simmer for another 5 minutes.
This makes a great topping for mashed potatoes, perhaps with a little grated parmesan cheese and a sprinkle of paprika and chopped chives or other herbs.
